Does the topping batter?

Today is Shrove Tuesday – aka the time to indulge in a pancake or five. Cathrene has some suggestions, on how to create the perfect pancake

Every year, around this time, the supermarkets start to display end of aisle specials for pancake making: flour, eggs, preprepared batter mix in a can – and, of course, the traditional lemon and sugar – ready for  Shrove Tuesday (also known as Pancake Tuesday, Pancake Day, Mardi Gras and Fat Tuesday).

While we are celebrating with our pancakes, the Swedes will be celebrating ‘Fettisdagen’ (Fat Tuesday) and the Danes celebrate ‘Fastelavn’ with a round sweet bun, hollowed out and replaced with marzipan (Sweden) or jam (Denmark) and whipped cream.  Other countries have a carnival.

But a pancake is so versatile!  The possibilities are endless… I did some asking around, and here are a few ideas to try this year..

Sweet toppings

  • Maple syrup, blueberries with vanilla ice-cream
  • Lemon curd with crumbled meringue
  • Raspberry with cream and meringue
  • Bananas with toffee sauce
  • Banana, strawberries and ice-cream
  • Cinnamon apples
  • Peanut butter and jam
  • Whiskey cream
  • Add some food colouring to the batter to create rainbow pancakes!
  • Dark chocolate shavings and Baileys ice-cream
  • Cheese and apple

Savoury toppings

  • Bacon and Cheshire cheese
  • Ham and blue cheese
  • Spinach, ricotta, nutmeg and smoked salt

Other things to do with pancakes

  • Spinach pancake towers: make six pancakes of roughly the same size.  Steam or boil fresh spinach, then stir in some cream and feta. Layer the pancakes in a deep pie dish with the spinach mix then tomato and mozzarella slices alternatively (starting and finishing with a pancake). Season some layers with freshly ground pepper. Top with grated cheese and bake in the oven until cheese has melted, and crispy on top. Serve immediately!
  • Use pancakes instead of lasagne pasta sheets, to make a delicious lasagne – less cooking time!

In Canada, items as obscure as string, wedding rings and nails are added!  (If you plan to try this, do warn your dinner guests!) Whatever you decide to do with your pancakes this year, enjoy!  And be sure to look out for the pancake races (listed in our events lists) which are happening across the country providing a great day out for all the family!
